Hey yall! I’m so glad you dropped by. Most of these are southern recipes that have been handed down for generations.There are a few people on Facebook that has begged me to do this for some time now. And I have been meaning to. But when my grandbabies asked me to write down all of my recipes. I knew I had to. Now please don’t expect anything fancy here. I’m just a southern cook that was taught how by my mother and grandmother. Some of these recipes you have probably heard of and others may be new to you. Either way, I hope you find something you just love. If you do find something you like. Leave me a comment or drop me a line. I have always loved to hear from my readers. *Note* I am one of those cooks that never measures anything. I have done it so many times that I can tell by looking at how much I use. If the recipe calls for a cup of sugar. I’m not going to measure it. I’m going to dump in the amount that looks like a cup to me. So, with that being said. I am going to try my best to convert my recipes into exact measurements for you. As long as you follow along somewhat closely, don’t worry, you won't mess it up. Relax! Cooking is supposed to be fun. Boiled Peanuts


 I made the mistake of posting this picture to my Facebook and Instagram accounts. To my surprise, there were quite a few of you asking me how I made them. Well, it's not a big secret, so I'll be happy to tell you.

If any of you have ever bought the green peanuts in the can Then you know how hard it is to eat them. They are very hard and it is near impossible to get the peanut out of the shell. This is just a simple way to make those peanuts something your whole family will devour.



Crockpot (Slow cooker) Or a large pot. I use a crockpot.

2 104-ounce cans of green boiled peanuts. If you can't find the large cans that's perfectly fine. Just get a larger amount of the small ones. Like 6 27-ounce cans.

Pour the peanuts into your crock pot. Be sure to taste the liquid to see if you need to add salt. If I have room, I usually add a little water (Maybe three cups.) Taste your liquid after adding the water to see if you need salt. Turn your crock pot on High and cook these overnight. Usually twelve to fourteen hours.

If you are using a pot, be sure to do this during the day so you can keep an eye on it. Bring your peanuts to a hard boil on high heat. Turn it down to medium-high heat cooking for about ten hours. Add salted water as needed.

When your peanuts are done. Strain them into a bowl. You can leave them out during the day for you and your family to enjoy. But refrigerate them overnight.

Southern Custard

 

My husband absolutely loves this stuff. And it's so easy to make!





Preheat oven to 400 degrees

1/2 Cup of Buttermilk

1 Cup of Sugar

2 eggs

3 tablespoons of flour

pinch of salt

1 stick of butter

1 teaspoon of vanilla

Mix all of the ingredients together and pour into a 9-inch pie shell. We prefer this cooked without the pie shell. But, you can get a nice recipe for a pie shell here. Or store-bought will be just fine.

Bake for 25 minutes or until the edges are golden brown. See the above picture.


Pie Shell







2 & 1/2 Cups of all-purpose flour

1 teaspoon of sugar

1 teaspoon of salt

4 tablespoons of ice water


put all ingredients in a medium sized bowl.

work with hands until the dough comes together. Divide the dough into half. Flaten halves into disks.

Hush Puppies

This recipe belongs to my mother, (Geneva Donald). It makes some melt in your mouth Hush Puppies. You must try them! I can't make these often because I honestly can't stop eating them.





1 Cup of self-rising flour
1 Cup of cornmeal
1 Teaspoon of baking soda
3 Tbsp tomato paste
4 egg yolks
buttermilk. (Enough buttermilk to moisten.)
Cooking oil

Stir all ingredients together and let set. Do not stir anymore. After thirty minutes. Drop by tablespoons into hot oil. Drain on paper towels.

Macaroni salad

 This is a quick dish that my family just loves. It's an effortless dish that can be served at home in front of the TV or taken to a potluck dinner as a perfect side dish. There is actually a funny story behind this, that I will tell you at the bottom of this Post.

I always keep two boxes of Velveeta Macaroni and cheese on hand. I mean, I am never without this stuff.  It can make a quick easy dinner and there are a million things you can add to it, to give it just the right taste that your family or guests will love.





2 Boxes of Velveeta mac and cheese. 

2 bell peppers (Seeded and chopped)

2 small cans of sliced black olives

1 can or ro-tell ( Hot or mild)


Make macaroni according to directions. 

Add in all the above ingredients and stir well. If possible, allow to set about an hour before serving.



This is how this recipe came to be. My son brought home a friend and it was about dinner time. I had planned dinner for three people but not four. I was scrambling to come up with something to make. Then I saw the Mac and Cheese sitting on the counter. I remembered that were had eaten Taco's the night before and I had saved some of the toppings in the refrigerator. I grabbed the bell peppers, olives, and diced tomatoes. I threw it all in the mac and cheese. I made a quick beer bread to serve with it. Everyone raved about it. LOL!
